The “vein” of the shrimp: a little-known culinary detail

this?

Not necessarily. It all depends on the size of the shrimp and how they’re used.

For small shrimp, the vein is often barely visible and generally left intact, especially in mixed dishes. For large shrimp, however, it’s more pronounced, and removing it is often preferred, both for aesthetic reasons

and for taste.

This is also why many shrimp are sold already peeled and deveined, to simplify preparation.
